Umami garlic butter pasta

Maitake is the umami king of the family. Mash it into garlic butter and suddenly a plain bowl of spaghetti tastes like a restaurant made it.

Serves 2, 20 min.

What you need

  • 200g spaghetti
  • 3 tbsp soft butter
  • 2 cloves garlic, crushed
  • 2 scoops Maitake
  • 1 pinch flaky salt
  • ¼ cup grated parmesan
  • 1 handful parsley, chopped

Let's go

  1. Mash the butter, garlic, maitake and salt together in a bowl.
  2. Cook the spaghetti in well-salted water. Save a mug of the pasta water before you drain.
  3. Toss the hot pasta with the butter and a splash of pasta water until it's glossy.
  4. Pile it up. Parmesan, parsley and lots of cracked pepper.

Bestie tip: Make a double batch of the butter and keep it in the fridge. It's unreal melted over grilled corn or a steak.
